1. Chicken and Wild Rice Soup

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Add chicken broth and bring to a boil. Stir in wild rice, reduce heat to low, and simmer until rice is tender, about 45 minutes.

Stir in cooked chicken and thyme. Season with salt and pepper. Simmer for an additional 10 minutes before serving.

2. Butternut Squash Soup
Ingredients:

  • 1 medium butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste

Instructions:

Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast on a baking sheet until tender, about 25 minutes.

In a large pot, sauté onion and garlic until soft. Add roasted butternut squash, vegetable broth, cumin, and cinnamon. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth. Adjust seasoning with salt and pepper as needed.

3. Minestrone Soup
Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 zucchini, diced
  • 1 cup small pasta
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Add vegetable broth, diced tomatoes, kidney beans, zucchini, pasta, oregano, and basil. Bring to a boil, then reduce heat and simmer until pasta is tender, about 15 minutes.

Season with salt and pepper before serving.

4. Lentil Soup
Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup dried lentils, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

In a large pot, heat olive oil over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables are tender, about 5 minutes.

Add vegetable broth, lentils, diced tomatoes, and cumin. Bring to a boil, then reduce heat and simmer until lentils are tender, about 30 minutes.

Season with salt and pepper before serving.

5. Tomato Basil Soup
Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans (14.5 oz each) diced tomatoes
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

In a large pot, heat olive oil over medium heat. Add onion and garlic. Cook until onion is translucent, about 5 minutes.

Add vegetable broth, diced tomatoes, basil, and oregano. Bring to a boil, then reduce heat and simmer for 20 minutes.
